How close of a grouping should an average 1911 shoot at 7 yards?

That's a perfectly respectable group for self-defense purposes. If you're planning on serious competition, you'll want to run it by a specialized pistolsmith, but for most peoples' purposes, you'd do well to leave well enough alone.
